  • Salt, pepper, fresh parsley to finish

Steps

  1. Sauté onion, carrots, celery in oil until soft. Add garlic 1 min.
  2. Pour stock, simmer 15 min. Add noodles, cook until tender.
  3. Add chicken to warm through. Season and serve with parsley.

Ingredients

  • 1 large butternut squash, halved & roasted
  • 1 onion • 2 cups vegetable stock • 1/2 cup cream or coconut milk
  • 1 tsp ground cinnamon • salt & pepper

Steps

  1. Roast squash (cut-side down) at 200°C (400°F) until tender, ~30–40 min.
  2. Sauté onion, add roasted flesh, stock and simmer 5–10 min.
  3. Blend until smooth, stir in cream, season and serve with pumpkin seeds.

Ingredients

  • 1 cup brown or green lentils, rinsed
  • 1 onion, 2 carrots, 2 celery stalks, 2 garlic cloves
  • 1 can diced tomatoes • 6 cups vegetable or chicken stock
  • 1 tsp cumin, salt, pepper • handful of spinach (optional)

Steps

  1. Sauté aromatics, add lentils, tomatoes and stock.
  2. Simmer ~25 min until lentils are tender. Stir in spinach if using.
  3. Adjust seasoning and serve with crusty bread.
