Ingredients
- 1 large butternut squash, halved & roasted
- 1 onion • 2 cups vegetable stock • 1/2 cup cream or coconut milk
- 1 tsp ground cinnamon • salt & pepper
Steps
- Roast squash (cut-side down) at 200°C (400°F) until tender, ~30–40 min.
- Sauté onion, add roasted flesh, stock and simmer 5–10 min.
- Blend until smooth, stir in cream, season and serve with pumpkin seeds.
Hearty Lentil & Vegetable Soup

Ingredients
- 1 cup brown or green lentils, rinsed
- 1 onion, 2 carrots, 2 celery stalks, 2 garlic cloves
- 1 can diced tomatoes • 6 cups vegetable or chicken stock
- 1 tsp cumin, salt, pepper • handful of spinach (optional)
Steps
- Sauté aromatics, add lentils, tomatoes and stock.
- Simmer ~25 min until lentils are tender. Stir in spinach if using.
- Adjust seasoning and serve with crusty bread.

Ingredients
